A unique take on the traditional washed process, cherries that are collected at the Gotiti washing station are first floated and sorted, before undergoing a 3-day whole cherry fermentation. After the appropriate duration, the mucilage is washed off and the coffees are dried on raised african beds. This allows the coffee to retain the signature brightness of a washed Ethiopian, with an extra layer of sweetness arising from the extended contact with the mucilage during the dry fermentation step.
