The Papayo variety gets it name from how its ripe cherries are a bright orange and shaped similarly to a papaya, and while its genetic roots are still relatively unknown, it hold a reputation for having a complex cup profile. In this lot grown by Diofanor Ruiz at La Divisa, a 30 hours underwater fermentation step prior to pulping enhances the acidity and strong aromatics of this coffee.
