Cesar Buesaquillo and his team at La Esmeralda have continually impressed us by the quality of their coffees, and we are excited to share this lot made up of the Pink Bourbon variety. After harvesting only the ripest cherries, the lot undergos an anaerobic fermentation step in sealed tanks before being dried with their mucilage intact. The careful processing creates a vibrant and sparkly acidity without excessive fermented notes.
